- Chickpeas
- Cucumber baby

Instructions
- 1.Place the chickpeas in a small saucepan and warm them gently over medium heat for 3–5 minutes. Alternatively, microwave them for about one minute.
- 2.Dice the cucumber, halve the cherry tomatoes and thinly slice the red onion.
- 3.In a large bowl, combine the warm chickpeas with the prepared vegetables.
- 4.Add the crumbled feta cheese.
- 5.Drizzle with olive oil and fresh lemon juice.
- 6.Season with salt and freshly ground black pepper.
- 7.Add the chopped mint and gently toss until everything is evenly coated.
- 8.Taste and adjust the seasoning if needed before serving.
