Instructions

  1. 1.Place the chickpeas in a small saucepan and warm them gently over medium heat for 3–5 minutes. Alternatively, microwave them for about one minute.
  2. 2.Dice the cucumber, halve the cherry tomatoes and thinly slice the red onion.
  3. 3.In a large bowl, combine the warm chickpeas with the prepared vegetables.
  4. 4.Add the crumbled feta cheese.
  5. 5.Drizzle with olive oil and fresh lemon juice.
  6. 6.Season with salt and freshly ground black pepper.
  7. 7.Add the chopped mint and gently toss until everything is evenly coated.
  8. 8.Taste and adjust the seasoning if needed before serving.
