- Raw Chicken Breast
- Brown Rice
- Zucchini
- Red Onion
- Garlic cloves
- Extra virgin oil
- Dried Oregano
- Sea Salt
- Black Pepper, Ground
Instructions
- 1.Cut the chicken breast into bite-sized pieces and season with salt, pepper and oregano.
- 2.Heat the olive oil in a large frying pan over medium heat.
- 3.Add the onion and cook for about 2–3 minutes until softened.
- 4.Stir in the garlic and cook for another 30 seconds, making sure it doesn't burn.
- 5.Add the chicken and cook for 6–8 minutes, stirring occasionally, until golden and cooked through.
- 6.Add the diced zucchini and cook for another 4–5 minutes, allowing it to soften while keeping a slight crunch.
- 7.Meanwhile, warm the cooked brown rice in the microwave or in a small saucepan with a splash of water.
- 8.Serve the chicken and vegetables over the rice.
