Instructions
- 1.Cook the lentils in 1 cup of water for about 15 minutes until tender.
- 2.While the lentils cook, sauté the garlic and tomato in a separate pan for 4 minutes.
- 3.Add the curry powder and stir for 30 seconds.
- 4.Add the cooked lentils and coconut milk.
- 5.Stir until combined.
- 6.Add the spinach and cook for 2–3 minutes until wilted.
- 7.Season and serve.
