Ingredients
- Raw Chicken Breast
- Zucchini
- Raw Carrot - peeled
- Olive Oil
- Garlic cloves
- Ginger and lemongrass cordial
- Reduced Salt Soy Sauce
- Honey
- lemon juice
- Coriander
Instructions
- 1.Combine the soy sauce, honey, lime juice and lemongrass in a bowl, then toss with the chicken.
- 2.Heat the olive oil in a frying pan over medium-high heat.
- 3.Cook the garlic for 30 seconds until fragrant.
- 4.Add the chicken and cook for 5–6 minutes until golden and fully cooked.
- 5.Stir in the carrot and cook for 2 minutes.
- 6.Add the zucchini and continue cooking for another 3 minutes until just tender.
- 7.Stir everything together to evenly coat the vegetables with the sauce.
- 8.Sprinkle with fresh coriander and serve immediately.
