Ingredients

  • Raw Chicken Breast
  • Zucchini
  • Raw Carrot - peeled
  • Olive Oil
  • Garlic cloves
  • Ginger and lemongrass cordial
  • Reduced Salt Soy Sauce
  • Honey
  • lemon juice
  • Coriander

Instructions

  1. 1.Combine the soy sauce, honey, lime juice and lemongrass in a bowl, then toss with the chicken.
  2. 2.Heat the olive oil in a frying pan over medium-high heat.
  3. 3.Cook the garlic for 30 seconds until fragrant.
  4. 4.Add the chicken and cook for 5–6 minutes until golden and fully cooked.
  5. 5.Stir in the carrot and cook for 2 minutes.
  6. 6.Add the zucchini and continue cooking for another 3 minutes until just tender.
  7. 7.Stir everything together to evenly coat the vegetables with the sauce.
  8. 8.Sprinkle with fresh coriander and serve immediately.
