- Spaghetti
- Raw Chicken Breast
- Olive Oil
- Garlic cloves
- lemon juice
- Baby Spinach
- Parmesan
- Sea Salt
- Black Pepper, Ground
Instructions
- 1.Bring a saucepan of salted water to a boil and cook the spaghetti according to the package instructions.
- 2.Reserve 2 tablespoons of pasta water before draining.
- 3.While the pasta cooks, heat olive oil in a large frying pan over medium-high heat.
- 4.Add the chicken strips and cook for 4–5 minutes until golden and fully cooked.
- 5.Reduce the heat slightly and add the garlic.
- 6.Stir continuously for about 30 seconds until fragrant.
- 7.Add the spinach and cook until wilted.
- 8.Stir in the lemon juice, lemon zest, and reserved pasta water.
- 9.Add the drained pasta and toss well to coat.
- 10.Sprinkle with Parmesan and black pepper before serving.
