Ingredients

  • Raw Chicken Breast
  • Potato
  • Olive Oil
  • Garlic cloves
  • Dried Oregano
  • Paprika
  • lemon juice
  • Sea Salt
  • Black Pepper, Ground
  • Cherry Tomato
  • Baby Spinach

Instructions

  1. 1.Preheat the oven to 200°C (fan-forced 180°C). Line a baking tray with baking paper.
  2. 2.Toss the potatoes with half the olive oil, paprika, salt and pepper. Spread them evenly on the tray.
  3. 3.Roast the potatoes for 20–25 minutes, turning them halfway through cooking until golden.
  4. 4.While the potatoes cook, season the chicken with oregano, garlic, salt, pepper and the remaining olive oil.
  5. 5.Heat a non-stick frying pan over medium heat and cook the chicken for 6–7 minutes per side, or until fully cooked.
  6. 6.Add the cherry tomatoes to the pan during the last 2 minutes so they soften slightly.
  7. 7.Serve the chicken with the roasted potatoes, fresh spinach and drizzle everything with lemon juice before eating.
