Instructions
- 1.Start by bringing a medium pot of water to a rolling boil. Add the Basmati Rice and cook for 10–12 minutes until tender but not mushy. Once finished, drain the rice thoroughly using a fine-mesh sieve and set it aside; the steam will continue to fluff the grains while you prepare the rest of the meal.
- 2.While the rice is boiling, grate the Cauliflower into rice-sized pieces using a box grater or a food processor. Heat a large, dry pan over medium heat,no oil is needed here, and sauté the cauliflower for 3–4 minutes. This "dry-fry" method removes excess moisture, ensuring it blends seamlessly with the actual rice later.
- 3.Slice the Chicken Breast into thin, even strips to ensure quick and even cooking. Heat a splash of Olive Oil in a separate pan over medium-high heat and sear the chicken for 6–8 minutes. Toss frequently until the pieces are golden-brown on the outside and completely cooked through.
- 4.Take a moment to finely dice the Capsicum and Cucumber into small, uniform cubes. These fresh ingredients are kept raw to provide a crisp, cooling texture that contrasts beautifully with the warm chicken and rice, adding essential micronutrients and hydration to the bowl.
- 5.Gently crumble the Feta Cheese into small pieces using your fingers or a fork. Preparing the feta separately allows you to control the distribution of its salty, creamy flavour across the bowl, ensuring every bite is perfectly seasoned without the need for extra salt.
- 6.In a large serving bowl, mix the cooked basmati rice and the sautéed cauliflower rice together; this effectively doubles the volume of your meal. Top the mixture with the golden chicken, the diced vegetables, and the crumbled feta.
