Lemon Basa with Baby Potatoes and Asparagus

Ingredients

  • Basa Fillet
  • Baby Carisma potatoes
  • Green Asparagus
  • Olive Oil
  • Garlic cloves
  • lemon juice
  • Lemon Peel
  • Sea Salt
  • Black Pepper, Ground
  • Continental Parsley

Instructions

  1. 1.Wash the baby potatoes thoroughly and cut them in half.
  2. 2.Place the potatoes in a saucepan with enough water to cover them and add a pinch of salt.
  3. 3.Bring to a boil and cook for about 10 minutes, or until they are just tender when pierced with a fork.
  4. 4.Drain the potatoes and set aside.
  5. 5.Pat the basa fillet dry with paper towel and season both sides with salt, black pepper, lemon zest and lemon juice.
  6. 6.Heat half of the olive oil in a non-stick frying pan over medium heat.
  7. 7.Place the fish in the pan and cook for about 4 minutes without moving it.
  8. 8.Carefully flip the fillet and cook for another 4 minutes, or until the fish flakes easily with a fork.
  9. 9.Remove the fish from the pan and keep warm.
  10. 10.In the same pan, add the remaining olive oil and the minced garlic. Cook for about 30 seconds until fragrant.
  11. 11.Add the cooked baby potatoes and cook for 3 minutes, stirring occasionally until lightly golden.
  12. 12.Add the asparagus and cook for another 3 minutes, stirring gently.
  13. 13.Sprinkle the chopped parsley over the vegetables.
  14. 14.Serve the basa alongside the potatoes and asparagus with an extra squeeze of fresh lemon if desired.
