Ingredients
- Green Beans
- Barramundi Fillet
- Olive Oil
- Butter
- Garlic cloves
- Lemon lime
- Pine Nuts
- Curly Parsley
Instructions
- 1.Cook beans in a saucepan of boiling salted water for 5 mins or until tender. Drain well.
- 2.Meanwhile, pat barramundi dry with paper towel.
- 3.Heat half the oil in a small non-stick heavy-based frying pan over medium heat.
- 4.Season barramundi and place, skin-side down, in the pan. Cook, pressing down on the barramundi, for 2 mins. Cook for a further 3 mins or until the skin is crisp and golden brown. Turn over and cook for 2 mins or until just cooked through. Transfer to a serving plate.
- 5.Add butter, garlic, lemon rind, pine nuts and remaining oil to the pan over low heat. Cook, stirring, for 5 mins or until garlic caramelises. Remove from heat.
- 6.Add lemon juice, parsley, if using, and 1 tbs water and stir to combine. Season.
- 7.Serve barramundi and beans with garlic butter sauce, sweet potato fries and rocket.
