Lemon and garlic butter barramundi

Ingredients

  • Green Beans
  • Barramundi Fillet
  • Olive Oil
  • Butter
  • Garlic cloves
  • Lemon lime
  • Pine Nuts
  • Curly Parsley

Instructions

  1. 1.Cook beans in a saucepan of boiling salted water for 5 mins or until tender. Drain well.
  2. 2.Meanwhile, pat barramundi dry with paper towel.
  3. 3.Heat half the oil in a small non-stick heavy-based frying pan over medium heat.
  4. 4.Season barramundi and place, skin-side down, in the pan. Cook, pressing down on the barramundi, for 2 mins. Cook for a further 3 mins or until the skin is crisp and golden brown. Turn over and cook for 2 mins or until just cooked through. Transfer to a serving plate.
  5. 5.Add butter, garlic, lemon rind, pine nuts and remaining oil to the pan over low heat. Cook, stirring, for 5 mins or until garlic caramelises. Remove from heat.
  6. 6.Add lemon juice, parsley, if using, and 1 tbs water and stir to combine. Season.
  7. 7.Serve barramundi and beans with garlic butter sauce, sweet potato fries and rocket.
