  • Raw Lamb Strips - lean
  • Couscous wholemeal
  • Olive Oil
  • Red Onion
  • Fresh Mint
  • Sea Salt
  • Black Pepper, Ground

Instructions

  1. 1.Place the couscous in a bowl and pour over the boiling water, according to the manufacturer's instructions.
  2. 2.Cover with a plate and leave for 5 minutes.
  3. 3.Fluff the couscous with a fork and stir through the mint.
  4. 4.Heat olive oil in a frying pan and cook the onion for 2–3 minutes until softened.
  5. 5.Add the lamb strips, season lightly, and cook for 5–7 minutes until browned.
  6. 6.Serve the lamb over the couscous and spoon any pan juices on top.
