Ingredients

  • Red Capsicum
  • Extra Lean Beef Mince
  • Uncooked Brown Rice
  • Crushed tomatoes
  • Red Onion
  • Garlic cloves
  • LIGHT MOZZARELLA SHREDDED CHEESE
  • Olive Oil
  • Deli Tuna Zesty Lemon & Italian Herbs
  • Sea Salt
  • Black Pepper, Ground

Instructions

  1. 1.Preheat the oven to 200°C. Cut the capsicum in half and remove the seeds.
  2. 2.Heat the olive oil and cook the onion, garlic and beef mince until browned.
  3. 3.Stir in the cooked rice, crushed tomatoes and Italian herbs. Simmer for 5 minutes.
  4. 4.Fill the capsicum halves with the mixture and top with mozzarella.
  5. 5.Bake for 20–25 minutes until the capsicum is tender and the cheese is lightly browned, and serve.
