- Slow Cooked Chicken Stock

Instructions
- 1.Preheat the oven to 200°C.
- 2.Place the zucchini, capsicum, and onion on a baking tray.
- 3.Drizzle with olive oil and season with Italian herbs, salt, and pepper.
- 4.Roast for about 20 minutes.
- 5.Meanwhile, place the couscous in a bowl and pour over the boiling stock.
- 6.Cover with a plate and leave for 5 minutes.
- 7.Fluff the couscous with a fork.
- 8.Heat a frying pan over medium-high heat.
- 9.Cook the pork for about 6 minutes until browned and cooked through.
- 10.Combine the couscous, roasted vegetables, and pork.
- 11.Sprinkle with Parmesan before serving.
