  • Raw Pork Loin Chop
  • Zucchini
  • Red Capsicum
  • Red Onion
  • Couscous wholemeal
  • Slow Cooked Chicken Stock
  • Olive Oil
  • Italian Herb Mix
  • Grated Parmesan
  • Sea Salt
  • Black Pepper, Ground

Instructions

  1. 1.Preheat the oven to 200°C.
  2. 2.Place the zucchini, capsicum, and onion on a baking tray.
  3. 3.Drizzle with olive oil and season with Italian herbs, salt, and pepper.
  4. 4.Roast for about 20 minutes.
  5. 5.Meanwhile, place the couscous in a bowl and pour over the boiling stock.
  6. 6.Cover with a plate and leave for 5 minutes.
  7. 7.Fluff the couscous with a fork.
  8. 8.Heat a frying pan over medium-high heat.
  9. 9.Cook the pork for about 6 minutes until browned and cooked through.
  10. 10.Combine the couscous, roasted vegetables, and pork.
  11. 11.Sprinkle with Parmesan before serving.
