Ingredients

  • Raw Pork Loin Steak - lean
  • Kent Pumpkin
  • Crispy Broccoli Florets
  • Extra virgin oil
  • Garlic cloves
  • Honey
  • Dijon Mustard
  • Reduced Salt Soy Sauce
  • Paprika
  • Sea Salt
  • Black Pepper, Ground
  • Continental Parsley

Instructions

  1. 1.Preheat the oven to 200°C (180°C fan-forced).
  2. 2.Place the pumpkin cubes on a lined baking tray and drizzle with half of the olive oil. Season with the smoked paprika, salt and black pepper, then toss to coat evenly.
  3. 3.Roast the pumpkin for 20 minutes, turning halfway through cooking, until golden and tender.
  4. 4.About 8 minutes before the pumpkin is ready, add the broccoli florets to the same tray so they become tender while still slightly crisp.
  5. 5.While the vegetables are roasting, combine the honey, Dijon mustard, soy sauce and minced garlic in a small bowl.
  6. 6.Season the pork lightly with black pepper.
  7. 7.Heat the remaining olive oil in a non-stick frying pan over medium-high heat.
  8. 8.Cook the pork for about 5–6 minutes per side, brushing the honey garlic mixture over the meat during the final 2 minutes of cooking until it forms a light glaze.
  9. 9.Remove the pork from the pan and allow it to rest for 2 minutes before slicing.
  10. 10.Serve the sliced pork alongside the roasted pumpkin and broccoli, garnishing with fresh parsley if desired.
