  1. 1.In a bowl, whisk together the whole egg, egg whites, and whey protein powder. Continue whisking vigorously until the mixture is completely smooth and free of any dry protein lumps. Using a wider bowl is essential here, as it allows the sourdough slices to lay flat, ensuring an even coating across the entire surface of the bread.
  2. 2.Place the rustic sourdough slices into the batter. Allow them to soak for 1–2 minutes per side; you want the bread to act like a sponge, absorbing as much of the protein-rich liquid as possible. If the bread is particularly crusty or thick, use a fork to gently poke a few holes in the surface to help the batter penetrate the centre.
  3. 3.Heat a large non-stick pan over medium heat. If your pan is prone to sticking, add a tiny spray of olive oil. Place the soaked bread into the pan and cook for 3–4 minutes per side. Keeping the heat at medium is key, too high and the protein in the batter will burn before the centre of the toast is set; too low and you’ll miss out on that signature golden, slightly crispy exterior.
  4. 4.Peel and slice the Banana into uniform rounds. Prepping your toppings while the bread is in the pan ensures that your breakfast is ready to be served the moment the toast is finished, keeping the meal hot and fresh.
  5. 5.Once the toast is golden and firm to the touch, transfer the slices to a serving plate. Arrange them in a stack or side-by-side, then top them immediately with the sliced banana rounds. The residual heat from the toast will slightly soften the bananas, naturally enhancing their sweetness without the need for extra refined sugar.
