Ingredients
- Wild Banana Prawn (tails on, deveined)125 g
- Lime0.25
- Extra virgin olive oil0.25 tbsp
- Brown Onion (finely chopped)0.25 large
- Raw Carrot - peeled (trimmed, finely chopped)0.25 large
- Red Capsicum (deseeded, finely chopped)0.25
- Garlic, peeled (crushed)0.5
- Red Chilli (deseeded, finely chopped, plus extra (optional), to serve)0.25
- Paprika0.75 tsp
- Cherry tomatoes100 g
- Light coconut milk31.25 ml
- Coriander0.25
- Uncooked White Rice
Instructions
- 1.Place the prawns on a large plate. Sprinkle with the lime zest and drizzle over the lime juice. Set aside for 10 minutes.
- 2.Meanwhile, heat the oil in a large non-stick frying pan over medium-high heat.
- 3.Cook onion and carrot, stirring, for 3 minutes or until onion starts to soften.
- 4.Add capsicum and cook, stirring, for 2 minutes.
- 5.Add garlic, chilli and paprika.
- 6.Cook, stirring, for 2 minutes or until aromatic.
- 7.Add the tomato and 125ml (½ cup) water, then bring to the boil.
- 8.Reduce heat and simmer, partially covered, for 10 minutes.
- 9.Add the coconut milk to the pan and simmer, uncovered, for 5 minutes.
- 10.Drain prawns of excess lime juice and nestle them into the tomato mixture.
- 11.Simmer for 5-10 minutes or until prawns are just cooked through.
- 12.Serve stew sprinkled with coriander and extra chilli, if desired.
- 13.Serve with steamed rice.
