Ingredients

  • Chilli haloumi cheese
  • Cherry tomatoes
  • Raw Lebanese Cucumber - unpeeled
  • Red Onion
  • Olive Oil

Instructions

  1. 1.Cut chilli haloumi cheese into 2cm cubes.
  2. 2.Thread haloumi and cherry tomatoes onto skewers, alternating between the two.
  3. 3.Lightly grill or pan-fry the skewers until the haloumi is golden brown on all sides.
  4. 4.While the skewers are cooking, prepare the cucumber salad by dicing raw Lebanese cucumber and red onion.
  5. 5.Toss the cucumber and onion together, along with olive oil, lemon juice, and salt and pepper to taste.
  6. 6.Serve the grilled haloumi skewers on top of the cucumber salad.
