- Raw Pork Loin Steak - lean
- Zucchini
- Raw Carrot - peeled
- Red Capsicum
- Red Onion
- Olive Oil
- Garlic powder
- Paprika
- Sea Salt
- Black Pepper, Ground
- lemon juice
- Continental Parsley
Instructions
- 1.Preheat the oven to 200°C (fan-forced 180°C).
- 2.Slice the zucchini into rounds, cut the carrot into thin strips, dice the capsicum, and cut the onion into wedges.
- 3.Place all the vegetables on a baking tray.
- 4.Drizzle with half the olive oil and season with salt, pepper, and smoked paprika.
- 5.Toss well until evenly coated.
- 6.Roast for 20 minutes, turning the vegetables halfway through cooking.
- 7.Meanwhile, season the pork loin with garlic powder, salt, pepper, and a squeeze of lemon juice.
- 8.Heat a non-stick frying pan over medium heat.
- 9.Add the remaining olive oil.
- 10.Cook the pork for about 4 minutes on each side, or until golden and cooked through.
- 11.Remove from the pan and let it rest for 2 minutes before slicing.
- 12.Serve alongside the roasted vegetables and garnish with chopped parsley.
