Ingredients

  • Raw Pork Loin Steak - lean
  • Zucchini
  • Raw Carrot - peeled
  • Red Capsicum
  • Red Onion
  • Olive Oil
  • Garlic powder
  • Paprika
  • Sea Salt
  • Black Pepper, Ground
  • lemon juice
  • Continental Parsley

Instructions

  1. 1.Preheat the oven to 200°C (fan-forced 180°C).
  2. 2.Slice the zucchini into rounds, cut the carrot into thin strips, dice the capsicum, and cut the onion into wedges.
  3. 3.Place all the vegetables on a baking tray.
  4. 4.Drizzle with half the olive oil and season with salt, pepper, and smoked paprika.
  5. 5.Toss well until evenly coated.
  6. 6.Roast for 20 minutes, turning the vegetables halfway through cooking.
  7. 7.Meanwhile, season the pork loin with garlic powder, salt, pepper, and a squeeze of lemon juice.
  8. 8.Heat a non-stick frying pan over medium heat.
  9. 9.Add the remaining olive oil.
  10. 10.Cook the pork for about 4 minutes on each side, or until golden and cooked through.
  11. 11.Remove from the pan and let it rest for 2 minutes before slicing.
  12. 12.Serve alongside the roasted vegetables and garnish with chopped parsley.
