Instructions
- 1.Preheat the oven to 200°C.
- 2.Toss the potatoes with olive oil, rosemary, salt and pepper, then roast for 25 minutes, turning once.
- 3.Season the lamb with salt and pepper.
- 4.Heat a frying pan over medium-high heat and cook the lamb for 4–5 minutes per side, depending on thickness.
- 5.Steam the broccoli for 4–5 minutes until tender.
- 6.Let the lamb rest for 3–5 minutes before serving.
- 7.Plate the lamb with the rosemary potatoes and steamed broccoli.
