- Raw Lamb Loin Chop - lean
- Beetroot
- Rocket
- Olive Oil
- lemon juice
- Sea Salt
- Black Pepper, Ground
Instructions
- 1.Remove the lamb from the refrigerator 10 minutes before cooking.
- 2.Season both sides with salt and pepper.
- 3.Heat a frying pan over medium-high heat.
- 4.Add half of the olive oil and grill the lamb for 4–5 minutes on each side.
- 5.Meanwhile, combine the rocket and beetroot in a bowl.
- 6.Dress the salad with the remaining olive oil and lemon juice.
- 7.Remove the lamb from the pan and let it rest for 2 minutes.
- 8.Slice the lamb and serve alongside the salad.
