  • Raw Lamb Loin Chop - lean
  • Beetroot
  • Rocket
  • Olive Oil
  • lemon juice
  • Sea Salt
  • Black Pepper, Ground

Instructions

  1. 1.Remove the lamb from the refrigerator 10 minutes before cooking.
  2. 2.Season both sides with salt and pepper.
  3. 3.Heat a frying pan over medium-high heat.
  4. 4.Add half of the olive oil and grill the lamb for 4–5 minutes on each side.
  5. 5.Meanwhile, combine the rocket and beetroot in a bowl.
  6. 6.Dress the salad with the remaining olive oil and lemon juice.
  7. 7.Remove the lamb from the pan and let it rest for 2 minutes.
  8. 8.Slice the lamb and serve alongside the salad.
