Ingredients
- Raw Kangaroo Loin Fillet
- Rocket
- Cherry Tomato
- Olive Oil
- Sea Salt
- Black Pepper, Ground
Instructions
- 1.Remove the kangaroo from the fridge about 10 minutes before cooking.
- 2.Pat the meat dry with paper towel and season both sides with salt and pepper.
- 3.Heat a frying pan over high heat until hot.
- 4.Add half the olive oil and swirl to coat the pan.
- 5.Cook the kangaroo for 3–4 minutes per side for medium-rare.
- 6.Transfer to a plate and let it rest for 3 minutes before slicing.
- 7.Toss the rocket and tomatoes with the remaining olive oil.
- 8.Slice the kangaroo against the grain and serve on top of the salad.
