Ingredients

  • Raw Kangaroo Loin Fillet
  • Rocket
  • Cherry Tomato
  • Olive Oil
  • Sea Salt
  • Black Pepper, Ground

Instructions

  1. 1.Remove the kangaroo from the fridge about 10 minutes before cooking.
  2. 2.Pat the meat dry with paper towel and season both sides with salt and pepper.
  3. 3.Heat a frying pan over high heat until hot.
  4. 4.Add half the olive oil and swirl to coat the pan.
  5. 5.Cook the kangaroo for 3–4 minutes per side for medium-rare.
  6. 6.Transfer to a plate and let it rest for 3 minutes before slicing.
  7. 7.Toss the rocket and tomatoes with the remaining olive oil.
  8. 8.Slice the kangaroo against the grain and serve on top of the salad.
