Ingredients
- Raw Eggplant - unpeeled
- Tomato
- Greek Feta Cheese
- Olive Oil
- Sea Salt
- Black Pepper, Ground
- Curly Parsley
Instructions
- 1.Wash the eggplant and trim off the stem.
- 2.Slice it into rounds about 1 cm thick.
- 3.Lightly brush both sides of each slice with olive oil.
- 4.Heat a grill pan or non-stick frying pan over medium-high heat.
- 5.Place the eggplant slices in the pan without overcrowding them.
- 6.Cook for 4–5 minutes on each side, until golden brown and tender when pierced with a fork.
- 7.While the eggplant cooks, combine the diced tomato, crumbled feta, and parsley in a small bowl.
- 8.Season the tomato mixture with a pinch of salt and black pepper.
- 9.Arrange the grilled eggplant slices on a plate and spoon the tomato-feta mixture over the top.
- 10.Serve immediately while warm.
