Ingredients

  • Raw Eggplant - unpeeled
  • Tomato
  • Greek Feta Cheese
  • Olive Oil
  • Sea Salt
  • Black Pepper, Ground
  • Curly Parsley

Instructions

  1. 1.Wash the eggplant and trim off the stem.
  2. 2.Slice it into rounds about 1 cm thick.
  3. 3.Lightly brush both sides of each slice with olive oil.
  4. 4.Heat a grill pan or non-stick frying pan over medium-high heat.
  5. 5.Place the eggplant slices in the pan without overcrowding them.
  6. 6.Cook for 4–5 minutes on each side, until golden brown and tender when pierced with a fork.
  7. 7.While the eggplant cooks, combine the diced tomato, crumbled feta, and parsley in a small bowl.
  8. 8.Season the tomato mixture with a pinch of salt and black pepper.
  9. 9.Arrange the grilled eggplant slices on a plate and spoon the tomato-feta mixture over the top.
  10. 10.Serve immediately while warm.
