Ingredients
- Raw Chicken Breast
- Zucchini
- Raw Carrot - peeled
- Olive Oil
- Garlic cloves
- lemon juice
- Sea Salt
- Black Pepper, Ground
- Continental Parsley
Instructions
- 1.Season the chicken with lime juice, salt and black pepper.
- 2.Heat half the olive oil in a frying pan and cook the chicken for 6–7 minutes on each side until fully cooked.
- 3.Remove the chicken and let it rest for 2 minutes before slicing.
- 4.Add the remaining olive oil to the same pan and cook the garlic for 30 seconds.
- 5.Add the carrot and sauté for 3 minutes.
- 6.Stir in the zucchini and cook for another 3 minutes until tender-crisp.
- 7.Slice the chicken and arrange it on a serving plate with the vegetables.
- 8.Sprinkle with fresh parsley and serve immediately.
