Ingredients

  • Raw Chicken Breast
  • Zucchini
  • Raw Carrot - peeled
  • Olive Oil
  • Garlic cloves
  • lemon juice
  • Sea Salt
  • Black Pepper, Ground
  • Continental Parsley

Instructions

  1. 1.Season the chicken with lime juice, salt and black pepper.
  2. 2.Heat half the olive oil in a frying pan and cook the chicken for 6–7 minutes on each side until fully cooked.
  3. 3.Remove the chicken and let it rest for 2 minutes before slicing.
  4. 4.Add the remaining olive oil to the same pan and cook the garlic for 30 seconds.
  5. 5.Add the carrot and sauté for 3 minutes.
  6. 6.Stir in the zucchini and cook for another 3 minutes until tender-crisp.
  7. 7.Slice the chicken and arrange it on a serving plate with the vegetables.
  8. 8.Sprinkle with fresh parsley and serve immediately.
