- Skim Milk
- Olive Oil
- Sea Salt
- Black Pepper, Ground
- Raw Chicken Breast
- Olive Oil
- Paprika

- Crispy Broccoli Florets
Instructions
- 1.Peel the potatoes and cut them into medium-sized cubes so they cook faster.
- 2.Place the potatoes in a saucepan, cover with cold water, add a pinch of salt and bring to the boil. Reduce to a gentle boil and cook for about 15 minutes, or until the potatoes are tender when pierced with a fork.
- 3.Meanwhile, season the chicken breast with salt, pepper, paprika and garlic powder, making sure both sides are evenly coated.
- 4.Heat the olive oil in a non-stick frying pan over medium heat. Cook the chicken for 6–7 minutes on each side until golden brown and fully cooked through. Transfer to a plate and let it rest for a few minutes before slicing.
- 5.Steam or boil the broccoli for 4–5 minutes until bright green and just tender.
- 6.Drain the potatoes thoroughly and return them to the warm saucepan. Mash until smooth, then gradually mix in the skim milk and olive oil until creamy. Season with salt and pepper to taste.
- 7.Serve the mashed potatoes with the sliced chicken and steamed broccoli.
