- Barramundi Fillet
- Rocket
- Cherry Tomato
- Cucumber baby
- Black olives-sliced
- Greek Feta Cheese
- Extra virgin oil

Instructions
- 1.Remove the fish from the fridge 10 minutes before cooking.
- 2.Season the barramundi with salt, pepper, and half the lemon juice.
- 3.Heat a non-stick frying pan over medium heat.
- 4.Add a few drops of olive oil.
- 5.Cook the fish for 4–5 minutes on each side until lightly golden.
- 6.In a bowl, combine rocket, cucumber, tomatoes, and olives.
- 7.Sprinkle feta cheese on top.
- 8.Dress the salad with olive oil and remaining lemon juice.
- 9.Serve the fish immediately alongside the salad.
