Ingredients

  • Barramundi Fillet
  • Rocket
  • Cherry Tomato
  • Cucumber baby
  • Black olives-sliced
  • Greek Feta Cheese
  • Extra virgin oil
  • lemon juice
  • Sea Salt
  • Black Pepper, Ground

Instructions

  1. 1.Remove the fish from the fridge 10 minutes before cooking.
  2. 2.Season the barramundi with salt, pepper, and half the lemon juice.
  3. 3.Heat a non-stick frying pan over medium heat.
  4. 4.Add a few drops of olive oil.
  5. 5.Cook the fish for 4–5 minutes on each side until lightly golden.
  6. 6.In a bowl, combine rocket, cucumber, tomatoes, and olives.
  7. 7.Sprinkle feta cheese on top.
  8. 8.Dress the salad with olive oil and remaining lemon juice.
  9. 9.Serve the fish immediately alongside the salad.
