Ingredients

  • Raw Chicken Breast
  • Red Quinoa
  • Hass Avocado
  • Raw Broccoli
  • Sesame Oil
  • Ginger
  • Coriander

Instructions

  1. 1.Rinse: Place the Quinoa in a fine-mesh sieve and rinse thoroughly under cold running water to remove any bitterness.
  2. 2.Boil: Add to a pot of boiling water. Cook for 12–15 minutes until the grains are translucent and the little "tails" have sprouted.
  3. 3.Drain well in a fine-mesh sieve. Return the quinoa to the warm pot, cover with a lid, and let it steam for 2 minutes to ensure maximum fluffiness.
  4. 4.While the quinoa boils, pat the Chicken Breast dry and season with the minced Ginger and a pinch of salt.
  5. 5.Heat a frypan over medium-high heat and add the Sesame Oil. Add the chicken and sear for 6–8 minutes, turning occasionally, until golden brown on the outside and cooked through. Slice into bite-sized strips once slightly cooled.
  6. 6.Place the Broccoli florets in a steamer basket over boiling water (or in a microwave-safe bowl with a splash of water. Steam for 3–4 minutes until vibrant green and "tender-critp"—it should still have a slight bite to it.
  7. 7.To plate: Start with a base of Quinoa. Arrange the sliced Chicken, steamed Broccoli, and diced Avocado in sections over the quinoa.
  8. 8.Keep the avocado separate until the very end to prevent it from getting mushy from the heat of the other ingredients. Drizzle the entire bowl with fresh Lime Juice. Top with fresh Coriander.
