Ingredients
- Lamb leg roast
- Brown Rice
- High Protein Plain Yoghurt
- Red Capsicum
- Cucumber baby
- Olive Oil
- Garlic, peeled
- Lemon, Raw with Peel
Instructions
- 1.Dice the Lamb Leg into small cubes and toss with minced Garlic.
- 2.Cook the Basmati Rice in boiling water for 10-12 minutes until fluffy, then drain.
- 3.Heat Olive Oil in a non-stick pan over medium-high heat and sear the lamb for 5-6 minutes until browned and cooked through.
- 4.Finely dice the Capsicum and Cucumber to create a fresh salsa. Douse in freshly squeezed lemon.
- 5.Assemble the bowl by placing the rice at the base, topped with the lamb and fresh salsa.
- 6.Finish with a dollop of Greek Yoghurt as a high-protein sauce alternative.
