Instructions
- 1.Combine the rolled oats, water, grated ginger, and miso paste in a saucepan.
- 2.Bring the mixture to a simmer over medium heat, stirring frequently until the oats have thickened.
- 3.Reduce the heat and stir in the egg whites vigorously, cooking for a further two minutes until the oats are light and voluminous.
- 4.While the oats are cooking, pan-fry the chicken breast seasoned with soy sauce in a non-stick pan until golden and cooked through.
- 5.Transfer the savoury oats to a bowl and top with the sliced chicken, fresh spinach, and avocado.
