Ingredients

  • organic rolled oats
  • Chicken breast
  • Simply Egg Whites
  • Hass Avocado
  • Baby Spinach
  • Ginger
  • Soy Sauce
  • WHITE MISO
  • Water

Instructions

  1. 1.Combine the rolled oats, water, grated ginger, and miso paste in a saucepan.
  2. 2.Bring the mixture to a simmer over medium heat, stirring frequently until the oats have thickened.
  3. 3.Reduce the heat and stir in the egg whites vigorously, cooking for a further two minutes until the oats are light and voluminous.
  4. 4.While the oats are cooking, pan-fry the chicken breast seasoned with soy sauce in a non-stick pan until golden and cooked through.
  5. 5.Transfer the savoury oats to a bowl and top with the sliced chicken, fresh spinach, and avocado.
