Ingredients

  • Ready to eat prawns
  • Potato
  • Olive Oil
  • Garlic cloves
  • lemon juice
  • Continental Parsley
  • Sea Salt
  • Black Pepper, Ground
  • Baby Spinach

Instructions

  1. 1.Bring a saucepan of salted water to the boil and cook the potatoes for 10–12 minutes, until fork tender. Drain well.
  2. 2.Heat the olive oil in a large frying pan over medium heat.
  3. 3.Add the garlic and cook for 30 seconds, stirring constantly to avoid burning.
  4. 4.Add the prawns, season with salt and pepper, and cook for 2–3 minutes per side until pink and fully cooked.
  5. 5.Stir in the cooked potatoes and gently toss everything together.
  6. 6.Add the lemon juice, parsley and baby spinach, cooking for another minute until the spinach wilts.
  7. 7.Serve immediately with an extra squeeze of lemon if desired.
