Ingredients
- Ready to eat prawns
- Potato
- Olive Oil
- Garlic cloves
- lemon juice
- Continental Parsley
- Sea Salt
- Black Pepper, Ground
- Baby Spinach
Instructions
- 1.Bring a saucepan of salted water to the boil and cook the potatoes for 10–12 minutes, until fork tender. Drain well.
- 2.Heat the olive oil in a large frying pan over medium heat.
- 3.Add the garlic and cook for 30 seconds, stirring constantly to avoid burning.
- 4.Add the prawns, season with salt and pepper, and cook for 2–3 minutes per side until pink and fully cooked.
- 5.Stir in the cooked potatoes and gently toss everything together.
- 6.Add the lemon juice, parsley and baby spinach, cooking for another minute until the spinach wilts.
- 7.Serve immediately with an extra squeeze of lemon if desired.
