Ingredients

  • Raw Eggplant - unpeeled
  • ITALIAN TOMATO PASSATA
  • LIGHT MOZZARELLA SHREDDED CHEESE
  • Dried Oregano
  • Sea Salt
  • Black Pepper, Ground

Instructions

  1. 1.Preheat the oven to 200°C (fan-forced 180°C).
  2. 2.Wash the eggplant and cut it into thick slices, about 1.5 cm thick.
  3. 3.Arrange the slices on a baking tray lined with baking paper.
  4. 4.Lightly season with salt and pepper.
  5. 5.Spread a small amount of tomato sauce on each slice.
  6. 6.Sprinkle mozzarella evenly over the top.
  7. 7.Finish with dried oregano.
  8. 8.Bake for 12–15 minutes until the cheese is melted and lightly golden.
  9. 9.Allow to cool for 2 minutes before serving.
