Ingredients
- Raw Eggplant - unpeeled
- ITALIAN TOMATO PASSATA
- LIGHT MOZZARELLA SHREDDED CHEESE
- Dried Oregano
- Sea Salt
- Black Pepper, Ground
Instructions
- 1.Preheat the oven to 200°C (fan-forced 180°C).
- 2.Wash the eggplant and cut it into thick slices, about 1.5 cm thick.
- 3.Arrange the slices on a baking tray lined with baking paper.
- 4.Lightly season with salt and pepper.
- 5.Spread a small amount of tomato sauce on each slice.
- 6.Sprinkle mozzarella evenly over the top.
- 7.Finish with dried oregano.
- 8.Bake for 12–15 minutes until the cheese is melted and lightly golden.
- 9.Allow to cool for 2 minutes before serving.
