Ingredients

  • Eggplant pickle
  • Parmesan Cheese Block
  • Cherry Tomato
  • Extra Virgin Olive Oil
  • Lemon lime
  • Sea Salt
  • Fresh Basil

Instructions

  1. 1.Cut each eggplant into 4 slices lengthwise, grate the cheese, and cut the tomatoes in half.
  2. 2.Drizzle the eggplant with olive oil and the juice of 1/2 a lemon.
  3. 3.Season with salt.
  4. 4.Add the cheese and tomatoes.
  5. 5.Bake in an air fryer at 180ºC for 10 minutes.
  6. 6.Finish with basil leaves.
