Ingredients
- Eggplant pickle
- Parmesan Cheese Block
- Cherry Tomato
- Extra Virgin Olive Oil
- Lemon lime
- Sea Salt
- Fresh Basil
Instructions
- 1.Cut each eggplant into 4 slices lengthwise, grate the cheese, and cut the tomatoes in half.
- 2.Drizzle the eggplant with olive oil and the juice of 1/2 a lemon.
- 3.Season with salt.
- 4.Add the cheese and tomatoes.
- 5.Bake in an air fryer at 180ºC for 10 minutes.
- 6.Finish with basil leaves.
