Ingredients

  • Eggs
  • Cos Lettuce
  • High protein yoghurt
  • Dijon Mustard
  • Chives
  • Sea Salt
  • Black Pepper, Ground
  • Paprika

Instructions

  1. 1.Place the eggs in a saucepan and cover them with cold water.
  2. 2.Bring the water to a boil over high heat.
  3. 3.Once boiling, reduce to a gentle simmer and cook for 9–10 minutes.
  4. 4.Transfer the eggs to a bowl of cold water and let them cool completely.
  5. 5.Peel the eggs and chop them into small pieces.
  6. 6.In a bowl, mix the eggs with the Greek yogurt, Dijon mustard, chives, salt, and pepper.
  7. 7.Spoon the egg mixture evenly into the lettuce leaves.
  8. 8.Sprinkle with paprika before serving.
  9. 9.Serve immediately.
