Ingredients
- Barramundi Fillet
- Purple Sweet Potato
- Walnut
- Olive Oil
- Green Asparagus
- Lemon Peel
- lemon juice
Instructions
- 1.Preheat oven to 200°C.
- 2.Cut sweet potato into wedges, toss with half the olive oil, season with salt and pepper, and roast for 20-25 minutes until golden.
- 3.Crush the walnuts into a coarse crumb and mix with lemon juice and a little lemon zest. Add a pinch of salt and pepper to taste.
- 4.Press the walnut mixture onto the top of the barramundi fillet.
- 5.Place the barramundi on a lined tray and bake for 10-12 minutes until the fish flakes easily.
- 6.In the final 5 minutes, toss the asparagus with the remaining oil and roast alongside the fish.
- 7.Serve the nut-crusted fish with the roasted wedges and greens.
