Ingredients

  • Barramundi Fillet
  • Purple Sweet Potato
  • Walnut
  • Olive Oil
  • Green Asparagus
  • Lemon Peel
  • lemon juice

Instructions

  1. 1.Preheat oven to 200°C.
  2. 2.Cut sweet potato into wedges, toss with half the olive oil, season with salt and pepper, and roast for 20-25 minutes until golden.
  3. 3.Crush the walnuts into a coarse crumb and mix with lemon juice and a little lemon zest. Add a pinch of salt and pepper to taste.
  4. 4.Press the walnut mixture onto the top of the barramundi fillet.
  5. 5.Place the barramundi on a lined tray and bake for 10-12 minutes until the fish flakes easily.
  6. 6.In the final 5 minutes, toss the asparagus with the remaining oil and roast alongside the fish.
  7. 7.Serve the nut-crusted fish with the roasted wedges and greens.
