Ingredients

  • Penne
  • Bacon
  • Freshly Frozen Peas Pastizzi
  • Greek Yogurt
  • Parmesan
  • Garlic cloves
  • Black Pepper, Ground
  • Curly Parsley

Instructions

  1. 1.Cook the wholemeal penne according to the package instructions.
  2. 2.Reserve ¼ cup of the pasta cooking water before draining.
  3. 3.Cook the bacon in a non-stick frying pan until lightly crispy.
  4. 4.Add the garlic and cook for 30 seconds.
  5. 5.Stir in the peas and cook for 2–3 minutes.
  6. 6.Lower the heat and mix in the Greek yoghurt.
  7. 7.Add a splash of the reserved pasta water to create a smooth, creamy sauce.
  8. 8.Stir in the cooked penne until well coated.
  9. 9.Sprinkle with Parmesan cheese and black pepper.
  10. 10.Garnish with chopped parsley and serve immediately.
