Ingredients

  • Fettucine
  • Raw Common Mushroom - fresh
  • Baby Spinach
  • High protein yoghurt
  • Olive Oil
  • Garlic cloves
  • Parmesan
  • Sea Salt
  • Black Pepper, Ground

Instructions

  1. 1.Cook the pasta according to the package instructions.
  2. 2.Reserve 3 tablespoons of pasta water before draining.
  3. 3.Heat olive oil in a frying pan over medium-high heat.
  4. 4.Add mushrooms and cook for 5–6 minutes until browned and their moisture has evaporated.
  5. 5.Add garlic and cook for 30 seconds.
  6. 6.Stir in the spinach until wilted.
  7. 7.Lower the heat and add the Greek yogurt.
  8. 8.Stir in 1–2 tablespoons of pasta water to create a smooth sauce.
  9. 9.Add the cooked pasta and toss until coated.
  10. 10.Sprinkle with Parmesan, season with salt and pepper, and serve.
