- Fettucine
- Raw Common Mushroom - fresh
- Baby Spinach
- High protein yoghurt
- Olive Oil
- Garlic cloves
- Parmesan
- Sea Salt
- Black Pepper, Ground
Instructions
- 1.Cook the pasta according to the package instructions.
- 2.Reserve 3 tablespoons of pasta water before draining.
- 3.Heat olive oil in a frying pan over medium-high heat.
- 4.Add mushrooms and cook for 5–6 minutes until browned and their moisture has evaporated.
- 5.Add garlic and cook for 30 seconds.
- 6.Stir in the spinach until wilted.
- 7.Lower the heat and add the Greek yogurt.
- 8.Stir in 1–2 tablespoons of pasta water to create a smooth sauce.
- 9.Add the cooked pasta and toss until coated.
- 10.Sprinkle with Parmesan, season with salt and pepper, and serve.
