Ingredients

  • Ready to eat prawns
  • Arborio Risotto Rice
  • High Protein Plain Yoghurt
  • Parmesan Cheese Block
  • Zucchini
  • Olive Oil
  • Garlic, peeled
  • Chicken Stock

Instructions

  1. 1.Sauté minced garlic and grated zucchini in olive oil until softened.
  2. 2.Add the dry arborio rice to the pan and toast slightly for 1 minute.
  3. 3.Gradually add chicken stock one ladle at a time, stirring constantly until the rice is tender and creamy. You may not need the entire quantity of chicken stock.
  4. 4.In the final 3 minutes, stir through the prawns until they turn pink and opaque.
  5. 5.Remove from heat and fold in Greek yoghurt and parmesan cheese for a high-protein 'creamy' finish.
