Ingredients
- Ready to eat prawns
- Arborio Risotto Rice
- High Protein Plain Yoghurt
- Parmesan Cheese Block
- Zucchini
- Olive Oil
- Garlic, peeled
- Chicken Stock
Instructions
- 1.Sauté minced garlic and grated zucchini in olive oil until softened.
- 2.Add the dry arborio rice to the pan and toast slightly for 1 minute.
- 3.Gradually add chicken stock one ladle at a time, stirring constantly until the rice is tender and creamy. You may not need the entire quantity of chicken stock.
- 4.In the final 3 minutes, stir through the prawns until they turn pink and opaque.
- 5.Remove from heat and fold in Greek yoghurt and parmesan cheese for a high-protein 'creamy' finish.
