  • Raw Chicken Breast
  • Fresh whole Mushrooms
  • Baby Spinach
  • Olive Oil
  • Butter
  • Garlic cloves
  • Dijon Mustard
  • Greek Yogurt
  • Chicken Stock
  • Dried Ground Thyme
  • Sea Salt
  • Black Pepper, Ground

Instructions

  1. 1.Season the chicken with salt, pepper, and thyme.
  2. 2.Heat the olive oil and butter in a large frying pan over medium heat.
  3. 3.Cook the chicken for 5–6 minutes per side until golden and fully cooked. Remove and set aside.
  4. 4.In the same pan, cook the mushrooms for 4–5 minutes. Add the garlic and cook for another 30 seconds.
  5. 5.Stir in the chicken stock and Dijon mustard.
  6. 6.Reduce the heat to low and mix in the Greek yogurt until the sauce is smooth.
  7. 7.Add the spinach and cook until wilted.
  8. 8.Return the chicken to the pan, coat with the sauce, and cook for 1 minute before serving.
