Ingredients
- Raw Chicken Breast
- Fresh whole Mushrooms
- Baby Spinach
- Olive Oil
- Butter
- Garlic cloves
- Dijon Mustard
- Greek Yogurt
- Chicken Stock
- Dried Ground Thyme
- Sea Salt
- Black Pepper, Ground
Instructions
- 1.Season the chicken with salt, pepper, and thyme.
- 2.Heat the olive oil and butter in a large frying pan over medium heat.
- 3.Cook the chicken for 5–6 minutes per side until golden and fully cooked. Remove and set aside.
- 4.In the same pan, cook the mushrooms for 4–5 minutes. Add the garlic and cook for another 30 seconds.
- 5.Stir in the chicken stock and Dijon mustard.
- 6.Reduce the heat to low and mix in the Greek yogurt until the sauce is smooth.
- 7.Add the spinach and cook until wilted.
- 8.Return the chicken to the pan, coat with the sauce, and cook for 1 minute before serving.
