Ingredients

  • Chick Peas
  • Red Onion
  • Tomato
  • Garlic cloves
  • Ground Cumin
  • Coconut milk
  • Olive Oil
  • Sea Salt

Instructions

  1. 1.Heat oil in a frying pan over medium heat.
  2. 2.Cook the onion for 4–5 minutes until soft and lightly golden.
  3. 3.Add garlic and cook for 30 seconds.
  4. 4.Add the tomato and cook for 3–4 minutes, stirring and gently crushing it with a spoon.
  5. 5.Add the cumin and mix gently.
  6. 6.Add the chickpeas and mix well so they are coated in the spices.
  7. 7.Pour in the coconut milk and stir.
  8. 8.Simmer for 8–10 minutes until slightly thickened.
  9. 9.Season with salt and serve with basmati rice.
