Ingredients
- Chick Peas
- Red Onion
- Tomato
- Garlic cloves
- Ground Cumin
- Coconut milk
- Olive Oil
- Sea Salt
Instructions
- 1.Heat oil in a frying pan over medium heat.
- 2.Cook the onion for 4–5 minutes until soft and lightly golden.
- 3.Add garlic and cook for 30 seconds.
- 4.Add the tomato and cook for 3–4 minutes, stirring and gently crushing it with a spoon.
- 5.Add the cumin and mix gently.
- 6.Add the chickpeas and mix well so they are coated in the spices.
- 7.Pour in the coconut milk and stir.
- 8.Simmer for 8–10 minutes until slightly thickened.
- 9.Season with salt and serve with basmati rice.
