  • Extra Lean Beef Mince
  • Wholemeal Wheat Pasta - dry
  • High Protein Plain Yoghurt
  • Olive Oil
  • Zucchini
  • Parmesan Cheese Block
  • Fresh Basil

Instructions

  1. 1.Brown the lean beef mince in a pan with olive oil and diced zucchini until cooked.
  2. 2.Boil the wholemeal pasta until al dente and drain, reserving a small amount of pasta water.
  3. 3.In a small bowl, mix Greek yoghurt with finely chopped fresh basil and parmesan to create a high-protein 'pesto' sauce.
  4. 4.Toss the pasta and beef together, then stir through the yoghurt mixture on low heat until creamy.
  5. 5.Add a splash of pasta water if needed to reach desired consistency and season with salt and pepper.
