- Chick Peas
- Zucchini
- Raw Carrot - peeled
- Red Onion
- Garlic cloves
- Tomato
- Olive Oil
- Ground Cumin
- CINNAMON GROUND
- Turmeric ground
- Sea Salt
- Black Pepper, Ground
- Continental Parsley
Instructions
- 1.Heat the olive oil in a saucepan over medium heat and cook the onion until softened.
- 2.Add the garlic, cumin, cinnamon and turmeric, stirring for 30 seconds.
- 3.Stir in the carrot and cook for about 4 minutes.
- 4.Add the zucchini and cook for another 3 minutes.
- 5.Mix in the diced tomato and cook until it begins to soften.
- 6.Add the chickpeas and season with salt and black pepper.
- 7.Simmer for 8 minutes, stirring occasionally, until the stew thickens slightly.
- 8.Garnish with fresh parsley and serve warm.
