Ingredients

  • Chick Peas
  • Zucchini
  • Raw Carrot - peeled
  • Red Onion
  • Garlic cloves
  • Tomato
  • Olive Oil
  • Ground Cumin
  • CINNAMON GROUND
  • Turmeric ground
  • Sea Salt
  • Black Pepper, Ground
  • Continental Parsley

Instructions

  1. 1.Heat the olive oil in a saucepan over medium heat and cook the onion until softened.
  2. 2.Add the garlic, cumin, cinnamon and turmeric, stirring for 30 seconds.
  3. 3.Stir in the carrot and cook for about 4 minutes.
  4. 4.Add the zucchini and cook for another 3 minutes.
  5. 5.Mix in the diced tomato and cook until it begins to soften.
  6. 6.Add the chickpeas and season with salt and black pepper.
  7. 7.Simmer for 8 minutes, stirring occasionally, until the stew thickens slightly.
  8. 8.Garnish with fresh parsley and serve warm.
