Chicken with Zucchini, Cherry Tomatoes and Olives

Ingredients
- Raw Chicken Breast
- Zucchini
- Cherry Tomato
- Black olives-sliced
- Extra virgin oil
- Garlic cloves
- Dried Oregano
- Paprika
- Sea Salt
- Black Pepper, Ground
- Continental Parsley
- lemon juice
Instructions
- 1.Season the chicken with salt, pepper, paprika and half of the oregano.
- 2.Heat the olive oil in a frying pan over medium heat. Cook the chicken for 5–6 minutes on each side, or until golden and cooked through. Transfer to a plate.
- 3.In the same pan, sauté the garlic for 30 seconds, then add the zucchini and cook for about 4 minutes.
- 4.Stir in the cherry tomatoes, olives and remaining oregano. Cook for another 2 minutes.
- 5.Return the chicken to the pan, drizzle with the lemon juice and cook for another 2 minutes.
- 6.Sprinkle with fresh parsley and serve immediately.
