Ingredients

  • Raw Chicken Breast
  • Raw Eggplant - unpeeled
  • Red Capsicum
  • Red Onion
  • Extra virgin oil
  • Garlic cloves
  • Dried Oregano
  • Paprika
  • Sea Salt
  • Black Pepper, Ground
  • Continental Parsley

Instructions

  1. 1.Season the chicken with salt, pepper and smoked paprika.
  2. 2.Heat the olive oil in a frying pan and cook the chicken for about 6 minutes on each side. Remove and set aside.
  3. 3.In the same pan, cook the onion and garlic for 2 minutes.
  4. 4.Add the eggplant and capsicum, season with oregano and cook for about 8–10 minutes until tender.
  5. 5.Return the chicken to the pan and cook for another 2–3 minutes.
  6. 6.Sprinkle with fresh parsley and serve.
