Ingredients
- Raw Chicken Breast
- Raw Eggplant - unpeeled
- Red Capsicum
- Red Onion
- Extra virgin oil
- Garlic cloves
- Dried Oregano
- Paprika
- Sea Salt
- Black Pepper, Ground
- Continental Parsley
Instructions
- 1.Season the chicken with salt, pepper and smoked paprika.
- 2.Heat the olive oil in a frying pan and cook the chicken for about 6 minutes on each side. Remove and set aside.
- 3.In the same pan, cook the onion and garlic for 2 minutes.
- 4.Add the eggplant and capsicum, season with oregano and cook for about 8–10 minutes until tender.
- 5.Return the chicken to the pan and cook for another 2–3 minutes.
- 6.Sprinkle with fresh parsley and serve.
