- Raw Chicken Breast
- Brown Onion
- Baby Spinach
- Greek Feta Cheese
- Olive Oil
- Garlic cloves
- Dried Oregano
- Balsamic Vinegar
- Curly Parsley
- Sea Salt
- Black Pepper, Ground
Instructions
- 1.Season the chicken with oregano, salt, and pepper.
- 2.Heat the olive oil in a frying pan and cook the chicken for 5–6 minutes per side. Remove and set aside.
- 3.Add the onion to the same pan and cook for 6–7 minutes until soft and lightly caramelised.
- 4.Stir in the garlic and balsamic vinegar, then cook for 30 seconds.
- 5.Add the spinach and cook until just wilted.
- 6.Return the chicken to the pan, top with the crumbled feta, and cook for 1 minute to warm through.
- 7.Garnish with fresh parsley and serve immediately.
