Ingredients

  • Raw Chicken Breast
  • Brown Onion
  • Baby Spinach
  • Greek Feta Cheese
  • Olive Oil
  • Garlic cloves
  • Dried Oregano
  • Balsamic Vinegar
  • Curly Parsley
  • Sea Salt
  • Black Pepper, Ground

Instructions

  1. 1.Season the chicken with oregano, salt, and pepper.
  2. 2.Heat the olive oil in a frying pan and cook the chicken for 5–6 minutes per side. Remove and set aside.
  3. 3.Add the onion to the same pan and cook for 6–7 minutes until soft and lightly caramelised.
  4. 4.Stir in the garlic and balsamic vinegar, then cook for 30 seconds.
  5. 5.Add the spinach and cook until just wilted.
  6. 6.Return the chicken to the pan, top with the crumbled feta, and cook for 1 minute to warm through.
  7. 7.Garnish with fresh parsley and serve immediately.
