Ingredients

  • Chicken breast
  • Raw Sweet Potato - unpeeled
  • Chick Peas
  • Olive Oil
  • High Protein Fetta
  • Baby Spinach

Instructions

  1. 1.Preheat oven to 200°C.
  2. 2.Dice sweet potato into small cubes and toss with half the olive oil and salt.
  3. 3.Place sweet potato and drained chickpeas on a baking tray and roast for 20 minutes until golden.
  4. 4.Season chicken breast with salt and pepper, then pan-sear in the remaining olive oil until cooked through (about 6 minutes per side).
  5. 5.Slice the chicken and assemble the bowl with fresh spinach, roasted sweet potato, chickpeas, and crumbled feta cheese.
