Ingredients

  • Raw Chicken Breast
  • Zucchini
  • Raw Carrot - peeled
  • Sesame Oil
  • Reduced Salt Soy Sauce
  • Ginger
  • Garlic cloves
  • Sesame Seeds

Instructions

  1. 1.Slice the chicken into thin strips and prepare the zucchini and carrot so they are similar in size for even cooking.
  2. 2.In a small bowl, combine the soy sauce and grated ginger.
  3. 3.Heat the sesame oil in a non-stick frying pan or wok over medium-high heat.
  4. 4.Add the garlic and cook for about 30 seconds until fragrant.
  5. 5.Add the chicken and stir-fry for 5–6 minutes until lightly browned and cooked through.
  6. 6.Add the carrot and cook for 2–3 minutes before stirring in the zucchini.
  7. 7.Pour the soy sauce mixture over the chicken and vegetables, stirring continuously for another 2 minutes until everything is evenly coated.
  8. 8.Sprinkle with sesame seeds and serve immediately on its own or with steamed rice.
