- Chicken breast
- Red Onion
- Red Chilli
- Original Seasoning
- Olive Oil
- Uncooked White Rice
- Hass Avocado
- Sea Salt
- Coriander
- Lime
Instructions
- 1.Preheat your oven to 200°C.
- 2.Slice the chicken, bell peppers, onions, and spicy peppers. Place them all onto a large baking sheet.
- 3.Drizzle the oil evenly over the chicken and vegetables. Sprinkle the entire packet of chicken fajita seasoning over the top.
- 4.Toss all the ingredients together on the pan until evenly coated, then spread them out into a single layer. Roast for 20-25 minutes until the chicken is cooked through and the vegetables are tender with slightly charred edges.
- 5.While the fajitas are baking, halve and pit the avocados. Scoop the flesh into a bowl, add a pinch of salt and a squeeze of fresh lime juice, and roughly mash with a fork.
- 6.Divide the cooked rice among your serving bowls to create a base. Top generously with the roasted chicken and pepper fajita mixture.
- 7.Add a large scoop of the smashed avocado to the center of each bowl. Sprinkle fresh cilantro over the top, arrange tortilla chips around the edge of the bowl, and serve with a fresh lime wedge.
