Ingredients
- Raw Chicken Breast
- Zucchini
- Raw Carrot - peeled
- Red Capsicum
- Brown Onion
- Uncooked Brown Rice
- Olive Oil
- Paprika
- Ground Cumin
- Sea Salt
- Black Pepper, Ground
- Coriander
- Juice, lemon
Instructions
- 1.Season the chicken with smoked paprika, cumin, salt and black pepper, mixing well to coat evenly.
- 2.Heat the olive oil in a large frying pan over medium-high heat.
- 3.Cook the chicken for 5–6 minutes until golden and fully cooked, then transfer it to a plate.
- 4.In the same pan, cook the onion, capsicum and carrot for about 4 minutes, stirring occasionally.
- 5.Add the zucchini and cook for another 2–3 minutes until just tender.
- 6.Return the chicken to the pan and stir everything together for 1 minute.
- 7.Warm the cooked brown rice and divide it into a serving bowl.
- 8.Top the rice with the chicken mixture, garnish with fresh coriander and serve with a lemon juice.
