Ingredients

  • Raw Chicken Breast
  • Zucchini
  • Raw Carrot - peeled
  • Red Capsicum
  • Brown Onion
  • Uncooked Brown Rice
  • Olive Oil
  • Paprika
  • Ground Cumin
  • Sea Salt
  • Black Pepper, Ground
  • Coriander
  • Juice, lemon

Instructions

  1. 1.Season the chicken with smoked paprika, cumin, salt and black pepper, mixing well to coat evenly.
  2. 2.Heat the olive oil in a large frying pan over medium-high heat.
  3. 3.Cook the chicken for 5–6 minutes until golden and fully cooked, then transfer it to a plate.
  4. 4.In the same pan, cook the onion, capsicum and carrot for about 4 minutes, stirring occasionally.
  5. 5.Add the zucchini and cook for another 2–3 minutes until just tender.
  6. 6.Return the chicken to the pan and stir everything together for 1 minute.
  7. 7.Warm the cooked brown rice and divide it into a serving bowl.
  8. 8.Top the rice with the chicken mixture, garnish with fresh coriander and serve with a lemon juice.
