Ingredients
- Raw Chicken Breast
- Potato
- Olive Oil
- Cherry Tomato
- LIGHT MOZZARELLA SHREDDED CHEESE
- Fresh Basil
- Sea Salt
- Black Pepper, Ground
- Glaze Balsamic
Instructions
- 1.Preheat the oven to 200°C.
- 2.Toss the potatoes with olive oil, salt and pepper and roast for 25 minutes, turning halfway through.
- 3.Season the chicken with salt and pepper and cook in a non-stick frying pan for 6–7 minutes per side.
- 4.During the last 2 minutes of cooking, place the mozzarella slices and cherry tomatoes on top of the chicken.
- 5.Cover the pan briefly until the cheese melts.
- 6.Transfer the chicken to a plate with the roasted potatoes and fresh basil leaves.
- 7.Drizzle with balsamic glaze before serving if using.
