Ingredients

  • Raw Chicken Breast
  • Potato
  • Olive Oil
  • Cherry Tomato
  • LIGHT MOZZARELLA SHREDDED CHEESE
  • Fresh Basil
  • Sea Salt
  • Black Pepper, Ground
  • Glaze Balsamic

Instructions

  1. 1.Preheat the oven to 200°C.
  2. 2.Toss the potatoes with olive oil, salt and pepper and roast for 25 minutes, turning halfway through.
  3. 3.Season the chicken with salt and pepper and cook in a non-stick frying pan for 6–7 minutes per side.
  4. 4.During the last 2 minutes of cooking, place the mozzarella slices and cherry tomatoes on top of the chicken.
  5. 5.Cover the pan briefly until the cheese melts.
  6. 6.Transfer the chicken to a plate with the roasted potatoes and fresh basil leaves.
  7. 7.Drizzle with balsamic glaze before serving if using.
