Ingredients
- Raw Chicken Breast
- Brown Onion
- Red Capsicum
- Fresh whole Mushrooms
- Crushed tomatoes
- Extra virgin oil
- Garlic cloves
- Dried Oregano
- Fresh Basil
- Sea Salt
- Black Pepper, Ground
- Continental Parsley
Instructions
- 1.Season the chicken with salt and pepper.
- 2.Heat the olive oil in a frying pan and cook the chicken for 5–6 minutes on each side. Remove and set aside.
- 3.In the same pan, cook the onion, garlic, capsicum and mushrooms for about 5 minutes.
- 4.Add the crushed tomatoes, oregano and basil, then simmer for 5 minutes.
- 5.Return the chicken to the pan and cook for another 3–4 minutes.
- 6.Garnish with fresh parsley and serve.
