Ingredients

  • Raw Chicken Breast
  • Brown Onion
  • Red Capsicum
  • Fresh whole Mushrooms
  • Crushed tomatoes
  • Extra virgin oil
  • Garlic cloves
  • Dried Oregano
  • Fresh Basil
  • Sea Salt
  • Black Pepper, Ground
  • Continental Parsley

Instructions

  1. 1.Season the chicken with salt and pepper.
  2. 2.Heat the olive oil in a frying pan and cook the chicken for 5–6 minutes on each side. Remove and set aside.
  3. 3.In the same pan, cook the onion, garlic, capsicum and mushrooms for about 5 minutes.
  4. 4.Add the crushed tomatoes, oregano and basil, then simmer for 5 minutes.
  5. 5.Return the chicken to the pan and cook for another 3–4 minutes.
  6. 6.Garnish with fresh parsley and serve.
