Ingredients

  • Raw Chicken Breast
  • Zucchini
  • Raw Carrot - peeled
  • Uncooked Brown Rice
  • Olive Oil
  • Garlic cloves
  • Sea Salt
  • Black Pepper, Ground
  • Paprika
  • Continental Parsley

Instructions

  1. 1.Cook the rice according to the package instructions.
  2. 2.Season the chicken with salt, black pepper and sweet paprika, making sure all pieces are evenly coated.
  3. 3.Wash and prepare the vegetables by slicing the zucchini into half-moons and the carrot into thin slices.
  4. 4.Heat the olive oil in a large non-stick frying pan over medium heat and cook the garlic for about 30 seconds until fragrant.
  5. 5.Add the chicken and cook for 5–6 minutes, stirring occasionally, until lightly golden and cooked through.
  6. 6.Stir in the carrot and cook for 3 minutes until it starts to soften.
  7. 7.Add the zucchini and cook for another 3–4 minutes, keeping it slightly crisp.
  8. 8.Warm the cooked brown rice in the microwave or in a small saucepan if needed.
  9. 9.Divide the rice into a bowl, top with the chicken and vegetables, and garnish with chopped parsley before serving.
