Ingredients
- Raw Chicken Breast
- Zucchini
- Raw Carrot - peeled
- Uncooked Brown Rice
- Olive Oil
- Garlic cloves
- Sea Salt
- Black Pepper, Ground
- Paprika
- Continental Parsley
Instructions
- 1.Cook the rice according to the package instructions.
- 2.Season the chicken with salt, black pepper and sweet paprika, making sure all pieces are evenly coated.
- 3.Wash and prepare the vegetables by slicing the zucchini into half-moons and the carrot into thin slices.
- 4.Heat the olive oil in a large non-stick frying pan over medium heat and cook the garlic for about 30 seconds until fragrant.
- 5.Add the chicken and cook for 5–6 minutes, stirring occasionally, until lightly golden and cooked through.
- 6.Stir in the carrot and cook for 3 minutes until it starts to soften.
- 7.Add the zucchini and cook for another 3–4 minutes, keeping it slightly crisp.
- 8.Warm the cooked brown rice in the microwave or in a small saucepan if needed.
- 9.Divide the rice into a bowl, top with the chicken and vegetables, and garnish with chopped parsley before serving.
