Ingredients

  • Raw Carrot - peeled150 g
  • Celery100 g
  • Chicken breast150 g
  • Chicken Stock1 L
  • Minced Garlic15 g
  • Olive Oil10 ml
  • Red Onion50 g

Instructions

  1. 1.Finely dice carrot, celery and onion. Add to a hot sauce pan with oil and stir occasionally until vegetables become soft and brown. Add garlic and stir through vegetables.
  2. 2.Add stock to saucepan and bring to a boil. Then reduce heat and allow vegetables to simmer for around 20 minutes.
  3. 3.Dice chicken and add to soup mix. Cook for around 10 minutes or until chicken is cooked through.
  4. 4.Season soup with salt and pepper to taste.
