Ingredients
- Raw Carrot - peeled150 g
- Celery100 g
- Chicken breast150 g
- Chicken Stock1 L
- Minced Garlic15 g
- Olive Oil10 ml
- Red Onion50 g
Instructions
- 1.Finely dice carrot, celery and onion. Add to a hot sauce pan with oil and stir occasionally until vegetables become soft and brown. Add garlic and stir through vegetables.
- 2.Add stock to saucepan and bring to a boil. Then reduce heat and allow vegetables to simmer for around 20 minutes.
- 3.Dice chicken and add to soup mix. Cook for around 10 minutes or until chicken is cooked through.
- 4.Season soup with salt and pepper to taste.
